Fortification
Fortification of food is the most efficient as well as cost- effective way of eliminating micro-nutrient malnutrition. The process involves enriching or improving the food product through restoration or addition of micro-nutrients where they are either lost or normally absent or otherwise present in minimal amounts.
The identification and selection of the ideal vehicle is very crucial as it has to be the food consumed by majority of the target population. Several staple foods like wheat flour, biscuits & bakery products, oils, vanaspati & margarines, milk & other dairy products, sugar and rice are being fortified globally to combat micro-nutrient deficiency.
